Salmon is one of the most healthy fish you can eat. They are many ways to prepare salmon but one of the most popular way to cook salmon is to smoke it. If you don't have a smoker at home, you can still smoke your salmon on a gas grill.





Before you start smoking salmon, you should understand that seafood is quite different from other type of meats such as chicken and beef as it can only last for a very short amount of time. To ensure that the salmon you use is fresh, you should never froze it. If you're preparing a whole fish, you need to first remove the head, tail and any fins of the body. After that, you would cut the salmon in half from the belly and remove all the internal organs then throw them away.

1. To prepare the marinade, in a large mixing bowl, add in the salt, sugar, water, soy sauce, pepper, Tabasco, onion powder, garlic powder and white wine. Combine and mix well.


2. Marinate the salmon chunks in the marinade in the fridge for at least 8 hours. Note: the longer you let it marinate, the stronger the flavor will be.


3. Remove the salmon chunks from the marinade and rinse them.


4. Let them glaze on the smoker racks for about an hour before putting them in the smoker for 12 to 24 hours.


5. Make sure you fill the flavor pan with 2/3 hickory and 1/3 alder. Note: you need to use 2 to 3 panfuls per 8 to 12 hours.
